Ingredients:
Mushrooms, 1 cup diced
Butter, half a stick (2 oz or 50 g)
Eggs, 2 slightly beaten
Bread cubes, 1.5 cups
How to prepare:
Cook shallots/onions in most of the butter (leave a bit) until
transluscent regularly stirring, add celery then chestnuts, keep
stirring. Cook mushrooms separately in remaining butter until brown,
stirring regularly, then add to rest. Keep stirring. Add lemon juice and
spices. Add eggs, bread cubes, dried cranberries, stir. Add chicken
broth so mixture doesn't become soggy (i.e., perhaps not full cup). Put
all in baking pan, heat at 350F for 30 minutes covered, then an extra 15
minutes uncovered.
